Veg Lasagna

    I am a big fan of Italian cuisine (after Indian cuisine, of course!!), and not just the ubiquitous Pizza. And while I keep attempting the pasta, pizza and even the gnocchi at home, lasagna was one thing I was putting off, more for fear of getting the homemade lasagna sheets wrong!! But fears are meant to be conquered, so I set out to try it and get it as right as I could!! Plus, the 14th Foodie Monday Bloghop theme was baking...I got the recipe for homemade eggless lasagna sheets from this blog



VEG LASAGNA



Ingredients :

Vegetable filling :
Boiled & diced potatoes (not too squishy) - 1 cup
Diced red pumpkin (Kaddu) - 1 cup
Diced capsicum - 1 cup
Blanched Cauliflower florets (** - see notes) - 1 cup
Soaked & drained soya nuggets - 1/2 cup
Boiled & diced carrots - 1 cup
Salt to taste
Red Chili powder - 1 1/2 tsps
Garlic powder - 1 1/2 tsps
Dried Oregano or mixed Italian herbs - 1 tsp

For Lasagna sheets - Makes about 10 sheets (original credit to this recipe ) :
Refined flour - 1 cup
Wheat flour - 1/2 cup 
Water - between 1/2 and 3/4th cup

Other ingredients (I used a white sauce topping, but you can use any) :
Cheese - 5 cheese slices or 1 cup grated processed cheese
Milk - 2 cups
Refined or wheat flour - 2 tbsps (dissolved in milk)
Black pepper powder - 1 tsp
Salt to taste
Dried Oregano or mixed Italian herbs - 2 tsps
Garlic powder - 1 tsp

Olive oil - 2 tbsps

Method

1. Heat olive oil in a wok and add the red pumpkin. Sprinkle little salt and cover cook till 3/4th done. Now add the cauliflower florets

2. Once the cauliflower is half-done as well, tip in the capsicum and let cook. Again when this is half done, add the remaining vegetables one by one. Add some more salt to taste along with chili powder, garlic powder and mix well. After about 5-7 minutes add the dried Italian herbs, let cook for couple minutes more and remove.

3. While the veggies are cooking, let's prepare the dough for the lasagna. In a clean bowl, add the refined flour and wheat flour. mix using a fork. Now add water little by little and keep mixing with the fork. 

4. Once the flour is assembled, knead with hands to get a firm but soft dough. Take care not to make it stretchy or add more water than needed. A little dry texture is fine here, but not crumbly. Let rest for 10 minutes.

5. For the white sauce, pour the milk and flour mix into a saucepan and keep stirring to avoid lump formation. Add in the cheese and stir again till cheese mixes well. Add the salt, black pepper powder, garlic powder and dried herbs. Stir for just a minute more and remove. It's ok if the sauce is a bit runny as it will typically thicken once cooled.

6. Dust a counter with some flour. Divide the dough into 2 portions. Roll out into a rough square and cut into 2. Keep one portion aside and continue to roll out the other half into as thin a sheet as possible and manageable. 

7. Keep dusting flour while rolling out. When you have a fairly large rectangle or square, cut into lasagna sheets or strips as desired and depending on the size of your baking dish. I used these rectangular ceramic dishes. 


8. Dust the sheets liberally with dry flour and place them on a flat tray or plate. Boil enough water in a large saucepan and salt. Gently drop in the pasta sheets one by one and take them out after a count of 10 seconds. Use a wide rimmed ladle to scoop them out lest they tear. Place them to drain on a plate.

9. Now comes the assembling. Coat the baking dishes with oil. Place 1 lasagna sheet. Add a layer of the veg filling and top off with another pasta sheet. Repeat as desired. It is also optional to add grated cheese in between layers if you like it rich. (I do!!)

10. Finally generously pour the white sauce over the assembled lasagna so that it coats all layers and then some. Using a microwave, I baked this at 200 deg C for 8-9 minutes and then at 170 deg C for 4 minutes more or till golden bubbles formed at the top. Remove from the oven, let cool for a bit. Cut and serve. 


(** - Advisable to blanch cauliflower and broccoli florets in boiling water with a 1/2 tsp turmeric powder added to it, then drain, wash and use for your dishes. This is not ideal but at least de-contaminates the florets of possible worms)

Quick fix Pasta with leftover veggies

A quick fix Pasta in White Sauce using ingredients mostly available at home...became an instant hit with my niece and nephew!!! As a plus I used up the leftover Broccoli-peas curry from the morning as well!

                                                       PASTA IN WHITE SAUCE

Ingredients : 

Boiled pasta (Penne or Farfalle works best) - 2 cups
Cold Milk - 1 1/2 cups
Cheese slices - 2
Maida - 2 tbsps
Whole wheat flour - 1 tbsp
Salt - to taste
Olive oil / Butter - 1 tbsp
Garlic powder - 1 tsp
Crushed Black Pepper - 1/2 tsp
Oregano / Mixed herbs (I used the small packs that usually get left-over each time one orders pizza!!)
Chilli flakes (optional)
Spicy tomato sauce for the garnish

Method : 

1. Heat oil / butter in a pan. Add in the vegetables as desired. For this recipe I used leftover Broccoli-Peas curry from the morning, so I added them along with the pasta, since they didnt need extra cooking!

2. In a bowl, whisk together milk, Maida + Wheat flour and salt leaving no lumps. Pour the milk mixture into the pan stirring all the while.

3. When it starts to thicken add the garlic powder and let simmer. Don't forget to keep stirring. Check for salt and add the pepper powder as well.

4. Drop in the 2 cheese slices and keep stirring till the cheese melts and mixes well with the milk. Let simmer for 2 minutes. Add the chili flakes if you need it extra spicy.

5. Now add in the boiled pasta and stir. [I added the leftover curry at this point.] Cover and let simmer for about 2 - 3 minutes. Stir in between and let cook for a minute more so the sauce coats the pasta well.
Tip : If pasta has cooled down and sticking together, drop it for a split second in hot water and take out immediately, This will shock the pasta and make it easier to mix in with the sauce.

6. Finally sprinkle the oregano and stir once. Remove and serve hot with lightly toasted brown bread.
Optional to half-cook this on flame and bake it with more cheese and tomato sauce(till cheese melts and forms golden brown spots) on top as I have done.
This is the basic sauce. One can also add in chopped and blanched spinach, capsicum, zucchini and so on for the vegetable touch.

Cheese-stuffed Eggless Gnocchi

From classy restaurants to street cafes, Italian cuisine is found, adapted and relished everywhere. While Pizzas and Pastas rule the roost at most places, let's not forget the humble, yet delectable Gnocchi
Mashed soft potatoes combined with flour, rolled in different shapes and poached to perfection, Gnocchi tastes amazing with different sauces.
Here's a cheese-stuffed one that can be served with any sauce. 

CHEESE-STUFFED GNOCCHI


Ingredients : 

Potatoes - 2 large
All purpose flour - 1/2 cup
Wheat flour - 1/2 cup
Salt to taste
Garlic powder - 1/2 tsp
Dried oregano - 1/2 tsp
Grated cheese for stuffing

Method : 

1. Wash the potatoes and prick all over with fork. Boil in salted water till soft, or pressure cook.

2. Remove, cool and peel. Mash well. Add salt to taste, garlic powder, dried oregano and mix well.

3. Now add the 2 flours alternately, but a bit at a time. Keep mixing till the mixture is less sticky. Do not add too much flour as we do not want a dough-like consistency. Gnocchi is best left a little sticky but it just enough flour to make it manageable. Cover and keep aside for about minutes.

4. Meanwhile simmer water, add little salt. Roll out the potato dough into a cylinder. Cut out equal portions and roll roughly. Make an indent and stuff a little grated cheese inside. Carefully seal and make a peda-like roll. Dust your hands with a little flour if needed. 

5. Once the water has reached boiling point, reduce the flame and keep it on uniform heat. Drop the rolled potato rounds very carefully into the water and poach them.

6. After about 5-6 minutes the rounds will start rising to the surface. Remove them carefully using a slotted spoon and keep aside.

7. Prepare a sauce as desired, cheese or tomato-based. Place the Gnocchi gently on the serving dish and lightly pour the sauce over it. Do not pour too much sauce. Finally sprinkle cheese just before serving.

Homemade Pizza

Getting the Pizza right, at home, is a challenge I am sure most of us love. My mother loves pizzas with wheat flour base and a thin crust at that. Thought would bite the bullet and try it out this weekend!! 
Above all, I followed the Tawa style of cooking, so no oven used here, unless you want to !!
WHEAT FLOUR PIZZA
Ingredients : (Makes six x 6 inch pizzas)
Whole wheat flour - 2 cups (or add 1 cup maida + 1 cup atta)
Instant Dry yeast - 2 tsps (Use curd if you do not wish to use yeast)
Sugar - 1 tsp
Salt to taste
Curd - 1 tbsp

Tomato sauce :
Olive oil - 2 tbsps
Tomato puree - 1 1/2 cups
Salt to taste
Chili flakes - 1 tsp
Garlic powder - 1 tsp
Dried herbs such as oregano
(You can also use any dry masala of your choice, eg, Garam masala, Tawa Fry, etc to give it an Indian touch!!)

Pizza Topping :
Chopped Capsicum - 1 cup
Sliced Onions - 1 cup
Paneer cubes - 1/2 cup
Grated Mozzarella cheese + any other extra cheese - as required
(One can add any topping of choice apart from these)

Method :

1. Soak yeast in a bowl along with luke warm water, sugar and 1 tsp salt. Stir and leave aside for 10 minutes till it becomes frothy.

2. Meanwhile sift together the flour and salt in a clean bowl. Make a well in the center and add the yeast mixture.
[Note : If you do not wish to use yeast, you can use 1 tsp Baking Pwd, 1 tsp Baking Soda and required curd to knead the dough]

3. Add 1 tbsp curd and knead into a soft but firm dough using sufficient water. Cover with a damp cloth and leave in a warm corner for about 1 1/2 hours or till it doubles in size.

4. Take the dough on a floured counter and punch it lightly. Roll into a cylinder and divide into 6 equal portions. Roll the portions out into pizza bases of desired thickness. Prick all over gently with a fork.

5. Heat a tawa on medium heat. Place the pizza base on the tawa, cover with a lid and cook on 1 side only for about 4-5 minutes. Remove and keep aside. Repeat with other bases as well.

6. For the sauce - heat olive oil in a pan and add the tomato puree. Let simmer on low to medium flame for about 4-5 minutes. We do not want to over-cook the sauce as it will be cooked once more with the pizza.
Add garlic powder, chili flakes, salt to taste and any other dry spice/masala you want to add. Finally add the dried herbs, stir for 1 minute and remove.
[I also tend to blanch the vegetables (except tomato and onion) a little, i.e, about 1/2 cooked so that they are easier to digest, especially for elders and children.]

7. Spread about 1 tbsp sauce on the cooked side of the pizza. Arrange the rest of the toppings leaving 1 cm space from the edges. Finally sprinkle grated cheese, you can be really generous here as a pizza without enough cheese isnt much fun :)

8. Place the prepared pizza base back on the tawa so that the uncooked side is directly on the pan now. Cover - cook on low heat for about 7-8 minutes or till cheese starts bubbling and becomes golden brown. At this point you can use the oven (normal or micro) as well. I used a combination of both so the pizzas got done faster!!

9. Remove the finished pizzas on to the serving plate, cut and serve :)

Tandoori Style Pasta


Penne is by far my most favourite variety of pasta. As long as I have a few packets of Penne in my larder, I am happy to innovate and improvise with Indo-Italian recipes !!

This one uses Indian masalas and I call it...........

TANDOORI STYLE PASTA



Ingredients :

Boiled Penne - 1 cup
Paneer Cubes - 200 gms
Zucchini or Bottle Gourd - 1/2 cup (sliced & blanched)
Capsicum - 1 (Diced)
Grated cheese - 1 cup
Tandoor masala - 2 tsps (*- see recipe below)
Tomato puree - 1 cup
Chili flakes - 1 tsp
Salt to taste
Crushed black pepper - to taste
Olive oil - 2 tbsps

Method : 

1. Heat olive oil in a wide pan. Add the tomato puree, chili flakes and cook for 5 minutes.

2. Add the blanched zucchini or bottle gourd slices and toss lightly. Add the capsicum and let cook for 5-7 minutes. We do not want the vegetables to become too soft.

3. Add the Tandoor masala, salt and black pepper. Mix and let cook for about 2 minutes.

4. Finally add the paneer cubes and cover-cook for 3-4 minutes. Toss in the boiled penne and mix gently. Switch off the flame and cover for 5 more minutes.
Sprinkle grated cheese and serve hot with warm bread.

1 tsp Cloves Powder 
1/2 tsp grated Nutmeg (Jaiphal) 
1 tsp Mace Powder (Javitri) 
11/2 tblsp Cumin (Jeera) Powder 
2 tblsp ground Coriander (Dhania) 
1 tsp Fenugreek (Methi) Powder 
1 tsp ground Cinnamon (Tuj/Dalchini) 
1 tsp fresh ground Black Pepper (Kalimirchi) 
1 tsp ground brown Cardamom (Elaichi) Seeds 
Grind all these ingredients and store in an airtight jar ]
